: Plant glucosyltransferases are recognized to possess a pronounced capability to glucosylate a broad range of various compounds, ranging from phenols, aromatic acids, coumarins, cyanogenic glucosides, glucosinolates to flavonoids, anthocyanins and monolignols. The glucosylation of selected isoflavones is the first committed reaction towards the interconversion cycle of isoflavone conjugates. The remarkable high specificity of the purified glucosyltransferase for such isoflavones underlines the involvement of those conjugates in the flexible production of defense compounds in legumes.
